It would never have occurred to me to eat Fromage frais as yoghurt. Here you find it alongside sour cream, and I think most people consider it a sort of fat free sour cream.

The last couple of years have seen a huge rise in a traditional Icelandic dairy product called skyr. Its consistency is like drained yoghurt but it has under 1% fat and a whopping 10-12g protein pr 100g, so skyr has replaced Fromage frais to some degree.


This stuff is definitely not fat free. It is about 8% fat.


How did they do that, I wonder. I bet that makes it at least 8 times better than the stuff at the store!
